Kuih Sarang Semut

22 Jul

My all time favourite eid kuih! Though the grating was super tiring cause I am a slow worker.

Anyway the ingredients:
250gm butter
200gm sugar powder/icing sugar
300gm plain flour
200gm custard flour
1/2 tsp baking powder
1/2 tsp vanilla essence
Chocolate rice as ants

Standard procedures. Beat butter and sugar till they are totally mixed. Then add vanilla into the mixture. Lastly, add the dry ingredients slowly. You can mix the dry ingredients first also. Grate the dough into the papercups. Try not to scoop the grated dough cause it will stick and will not look nice! Sprinkle chocolate rice on top. Bake it and you are done! 👌

Darwish’s 3rd Birthday!

22 Jun

Edible print can save a life! Unlike his first and second birthday, I took an easier way out this time.

He still love his cake though! I’m hoping that my laziness will disappear and I will start baking soon!! Need to be prepared for Quwaidir’s 2nd birthday cake too. I did not have the time last year for his 1st birthday. Feel a little guilty.

Anyway Darwish’s 3rd cake was just a simple sponge cake with eclair nutella filling. Nutella makes everything taste so wonderful!

Nutella Cups

17 May

Nutella Cup (1)

One of the bakes that I would definitely put under the FAIL category. I’m sure nothing is wrong with recipe I used. It was just me. The cookies were underbake-overbake, if there is such a thing. You know it’s underbake when you eat it then after sometime you decided to put it back in the oven (I know! I know! What was I thinking?!) and then it became overbaked cookies. Haha!

Nutella Cup(2)

But as usual, with nutella everything will be slightly better right? 🙂 Will need to try again! But I have been very lazy lately. Hence the lack of bakes and updates.

CNY Macarons

21 Feb

cny macs (6)

Hehe, super belated Chinese New Year-ish macarons! My two oranges!!

I think this is one of the few wonderful batches of macarons I had made. I am never consistent in my bakes. So I was super duper happy when I saw how they turned out!

See! So cute right! hahaha

Chocolate Macarons

15 Feb

So, I finally baked macarons again. Using a different recipe that I found online.  Baked them sometime late January if I am not wrong. And only today I realised I did not save the recipe anywhere. Stupid or what!

choc macs (1)

It’s too chocolate-y for me since I am not a chocolate person. But I really like the look. Very macaron-ish.

choc macs (2)

I played cheat a little. Wanted to eat them fast and was lazy to do any chocolate ganache. So, nutella to the rescue!

choc macs (3)

I think I baked another batch few days after. And it didn’t work out at all. Pffth. What’s new right. I always did it okay the first time round. And then I will destroyed the whole thing on the next batch. Maybe this is why I threw away the recipe. Must have been feeling super frustrated. Whahaha.

Congo Bars & VSC

7 Dec

Last Saturday I have decided to try out baking Congo Bars. I saw them on Kitchen Guardian’s instagram.

But mine turned out to be more cakey then what I imagined them to be:

Congo Bar

I made them using the recipe from Bisous À Toi here.

2 3/4 cup all purpose flour
2 1/2 tsp baking powder
1/2 teaspoon salt
150g butter, softened
320g light brown sugar
3 eggs
1 tsp vanilla
320g chocolate chips

I was reading through Bakerella’s and I have decided to mix the ingredients by hand. Probably why mine was cakey.

Sift flour, baking powder and salt into a large bowl. Set aside.
Stir brown sugar into softened butter in another large bowl until butter disappears. You can use the back of your spoon to help incorporate the two together.
Add eggs one at a time to butter mixture and stir well after each egg.
Add vanilla, chocolate chips and nuts. Mix well.
Add dry flour mixture and stir until well combined.

Mine is also a little taller cause I used 10 x 10 pan instead of the 13 x 9 recommended pan. hee. I was lazy to dig and find the 13 x 9 pan. I like how this congo bars taste like cookies. Indeed it is true! Brownie + cookie! Will try to do it again using mixer and 13 x 9 pan. Want mine to be a little similar to Kitchen Guardian’s! (here, here, here, here)  Not satisfied with mine that’s why I didn’t bother to take more pictures.

Told you my family (or rather my mum) loves Victoria Sandwich Cake. She made them again & again.

For my aunt’s and uncle’s anniversary:

Victoria Sandwich Cake – Square Edition

19 Nov

VSC (5)

We love the Victoria Sandwich Cake so much that I had to bake them again cause my mum purposely bought a lot of strawberries few days back.

VSC (1)

I decided to change the cake from round to square. Something like sheet cake. But this time, I added lots of strawberry for the filling. This is weird coming from someone who do not eat strawberry at all!

VSC (3)

I had used the same recipe as the previous post below. (Note: I had decreased the ingredients from 250g to 210g.) Super delicious! Made you feel like you are eating healthy for a moment. hee.

VSC (6)

I had some batter left for 6 cupcakes. Did not dare to use all for my 9 x 9 (times 2) square pan cause I had test bake one cupcake earlier. Then I anyhow estimate for the square pan.

VSC (4)

My favourite cake for now. Easy to bake, fuss free decoration & so nice to eat. 🙂
